Cutting with embossing: how to get good results

Roll the dough out evenly. Firm, well-chilled dough holds its outline and embossing best. Before cutting, dip the cutter briefly in flour or icing sugar so that nothing sticks. Press it straight down through the dough with even pressure and carefully lift out the shape. For fondant and marzipan, work on a lightly dusted surface. Salt dough, modelling clay and Fimo work in the same way; the material should not be rolled out too thinly. If you use the cutter for Fimo or modelling clay, do not use it for food afterwards.
