Using the embossing cutter

Before cutting, dip the cutter lightly in flour or, for fondant and marzipan, in cornflour or icing sugar. This stops the mixture sticking in the embossed pattern. Press the cutter straight and firmly into the rolled-out dough until the outline is cut cleanly through. Then use the ejector to push the shape onto the baking tray without squashing the fine detail. Well-chilled dough holds the embossing better during baking.

• Wash the cutter straight after use under warm running water; it can also go in the dishwasher.
• If you have used the cutter for craft materials such as wax or modelling clay, do not use it for food afterwards.
